Celebrated Japanese Restaurant Opens Its Doors as Part of The Del’s Multi-Million-Dollar Transformation

SAN DIEGO, CA (May 7, 2025) – Today, Hotel del Coronado announces the opening of Nobu Del Coronado, marking the highly anticipated arrival of Nobu’s world-renowned Japanese cuisine to Coronado Island. The opening of Nobu Del Coronado will mark a significant enhancement to the hotel’s already exceptional beachfront dining portfolio.

Nobu Del Coronado will introduce a culinary journey that seamlessly blends Chef Nobu Matsuhisa’s signature style with The Del’s timeless elegance. Nobu Del Coronado guests can indulge in an array of Nobu-signature dishes, including Black Cod with Miso, Squid ‘Pasta’ with Garlic Sauce and A5 Wagyu, alongside Nobu’s innovative sushi creations. In addition to this, the concept will offer a selection of locally inspired, Southern California dishes unique to Nobu Del Coronado like Tai Sweet Shiso, Lobster Truffle Tempura, Beef Kushiyaki Skewers and more.

“The arrival of Nobu signifies a new chapter in The Del’s storied history,” said JP Oliver, Area Managing Director, Hotel del Coronado. “This exciting partnership with Chef Nobu Matsuhisa and Robert De Niro and Meir Teper’s restaurant empire reflects our unwavering commitment to culinary excellence, and to providing unparalleled luxury dining experiences that further enhance our iconic resort.”

The outdoor-indoor restaurant will feature 156 seats, 120 of which will be beautifully situated al fresco, with scenic views of the Pacific Ocean, as well as a dedicated eight-seat sushi bar and stylish 12-seat Pagoda Bar, offering curated selections of sake, Japanese whiskeys and innovative cocktails. The 3,700 square feet of oceanfront dining space will also serve as a breathtaking venue for private events.

Rob Harper, Head of Real Estate Asset Management Americas at Blackstone, said, “As we approach the completion of our $550 million restoration and revitalization of the historic Hotel del Coronado, we’re thrilled to begin offering guests and community members a world-renowned dining experience with Nobu.”

The addition of Nobu del Coronado complements Hotel del Coronado’s ambitious six-year, $550 million reimagination and revitalization project, which will reach its culmination in June 2025. Marked by the reopening of the historic Victorian building, the renovation includes a fully restored garden courtyard, reimagined event spaces and two new dining destinations, Veranda and Nobu Del Coronado. Over the course of the six-year revitalization journey, more than 300 full time resort jobs have been created, in addition to thousands of construction jobs. This transformation will further solidify The Del’s position as one of America’s premier luxury resort destinations.

Hotel del Coronado is located at 1500 Orange Ave., Coronado, CA 92118. For more information about Nobu Del Coronado and to make reservations, please visit: hoteldel.com/nobu.
